P R O C E S S
Harvest
The process begins on the coffee plantations, where the coffee beans, known as coffee cherries, are carefully hand-picked. This method ensures that only ripe cherries are selected, which is crucial for obtaining high-quality coffee. Harvesting time varies depending on the region and the type of coffee grown.
Pulped
Once harvested, the coffee cherries undergo the pulping process, during which the outer pulp is removed to release the coffee beans inside. This step is critical to ensuring the beans don't absorb unwanted flavors from the pulp.
Fermentation
The pulped beans are placed in fermentation tanks, where they remain for 12 to 48 hours. During this time, natural enzymes break down the sugars attached to the beans, helping to develop the coffee's complex flavors.
Washing and Drying
After fermentation, the beans are thoroughly washed to remove any remaining residue. They are then dried under the sun or in mechanical dryers until they reach the appropriate moisture level, usually between 10% and 12%. This step is crucial to prevent mold growth and preserve the coffee's flavor.
Roasted
Roasting is where coffee truly begins to develop its characteristic flavor profile. Green beans are roasted at temperatures ranging from 180°C to 250°C. The roasting time and degree depend on the type of coffee being produced. During this process, the beans undergo chemical transformations that release their unique aromas and flavors.
Grinding
Once roasted, the beans are ground to make coffee. Grinding can vary from very fine to coarse, depending on the preparation method, such as espresso, French press, or filter coffee.
Preparation
Finally, the ground beans are infused in hot water, allowing their flavors and aromas to fully extract. Whether you prefer an intense espresso or a smooth, aromatic coffee, each cup is the result of a careful and meticulous process that begins with the harvest.
